From our reading of the New Testament we've come to believe that Christian baptism was done via immersion. In an effort to preserve that tradition we perform baptism this same way.

In Matthew 3:13-17, Jesus set the example by being baptized himself. In Matthew 28:19, Jesus gave the command for his disciples to go forth and baptize others. And in Acts 2:38-39, Scripture makes it clear that this was not only for the disciples but for all Christians everywhere until Christ returns.

38Peter said to them, "Repent, and each of you be baptized in the name of Jesus Christ for the forgiveness of your sins; and you will receive the gift of the Holy Spirit.

39"For the promise is for you and your children and for all who are far off, as many as the Lord our God will call to Himself."
